I recently posted this on my food-porn FILLED Instagram account and asked my beautiful followers if they wanted the recipe.

It proved to be one of my most popular posts that week, so I’m sharing it with you all because I’m such a nice and lovely person. You’re welcome!

Then, pondering a suitable title got me thinking. There is something a little sad about the recipe: it’s only for one. I toyed with ‘Lonely hearts, brunch for one’ but decided that was far too melancholy.

When I made this for myself one rainy Tuesday morning, it really felt like a treat. A healthy, vibrant, delicious one-pan, one-bowl breakfast of utter goodness. So ‘Love-yourself, brunch for one’ seemed much more appropriate.

Do yourself a favour and get up half an hour earlier one day this week to really treat yourself. You won’t regret it, I promise.

What you need

  • 3 large mushrooms, quartered
  • a handful of plum or cherry tomatoes, halved
  • half a large shallot, sliced
  • fresh sliced jalapeno (optional, but they’re not too spicy so try not to skip!)
  • cooking oil, I use Calvia Rapeseed
  • 1 tsp dried herbs de Provence or mixed Italian herbs
  • 1 tsp paprika
  • 1 large, free-range egg (preferably from your local farm if you want that orange-yolk goodness!)

What to do

turn on your grill to medium.

heat the oil in a small frying pan over a medium heat on the hob. add the veggies and gently fry for 3-4 minutes.

add the dried herbs and paprika and stir well, ensuring the veggies are cooking evenly. continue to cook for another 1-2 minutes or so until the chunks of mushrooms soften and the tomatoes are just starting to go all squidgy.

using your spatula, make a ‘well’ or hole in the centre by pushing all the veggies to the outside of the pan. crack in your farm-fresh egg and turn up the heat a little. leave it on the heat for a minute or so until the egg white begins to cook.

transfer the pan to the grill and heat there until the egg cooks through, about 2 minutes max for a running yolk.

pop it all on a plate, serve with your favourite chilli sauce and enjoy ❤️
