Eggie Crumpets with Marmite and Feta

I can’t express how much I love crumpets. And my absolute go-to is always to have them toasted (so the bottom is crispy) then smothered in Lurpak, then Marmite.

But, I wanted to come up with a recipe that’s a little bit more special. Perhaps, dare I say, for Christmas morning. 🎄🍴

These little bad boys make the perfect Christmas morning brekkie. They’re easy and delicious and ready in less than 15 minutes. So more time for opening presents and sipping Bucks Fizz 🍾🥂🎁

Christmas Morning Eggie Crumpets with Marmite and Feta

The recipe below makes two crumpets, so just double up as needed. It takes around 10 minutes. Serve with wilted, buttered spinach and a brew or some Bucks Fizz!

What you need:

  • 1 free range egg, lightly beaten
  • 2 crumpets
  • Greek feta cheese, for topping
  • chilli flakes, for topping
  • Marmite, for spreading
  • a knob of Lurpak and a dash of rapeseed oil, for frying
  • salt and pepper

What to do:

Heat the oil and Lurpak in a large non-stick pan. Season the lightly beaten eggs with salt and pepper, then dip the crumpets in the eggie mixture one by one. Make sure they soak up all of the eggie goodness!

Transfer the egg-soaked crumpets into the pan hole-side down first. Gently fry until golden brown, then flip and repeat on the other side (about 5 mins in total).

Once your crumpets are golden and crispy, remove from the pan and transfer onto some kitchen paper to absorb any excess butter (there is such a thing!)

Spread a layer of Marmite across each crumpet and top with crumbled feta and chilli flakes.

Serve with some buttered greens (spinach works really well) and enjoy!
